Bell Peppers
Sweet peppers like the 'Bell' are green when young. The most popular green bell pepper turns a gorgeous red when mature. Other varieties turn orange, gold or even purple. Though considered a vegetable, the bell pepper is closely related to spicy chile peppers.

Green bells are thick fleshed with a mild, sweet vegetable flavor. Red, orange and gold peppers are sweeter, with pleasing, fruity tones.

A good pepper is firm and shiny, never dull or shriveled. A great source of vitamin C, bell peppers can be cooked in a variety of ways or eaten fresh in salads.
